Ingredients

  • Woolworths Sweet Solanato Tomato Punnet
  • Woolworths Qukes Baby Cucumbers Punnet
  • Woolworths Baby Leaf Spinach
  • Spring Onion Bunch
  • Olive oil (not on special)
  • Red wine vinegar (not on special)
  • Salt and pepper (not on special)

Steps

  1. Slice tomatoes and baby cucumbers and place in a bowl.
  2. Tear or fold baby leaf spinach and add to the bowl with sliced spring onion.
  3. Whisk olive oil, red wine vinegar, salt and pepper and drizzle over the salad.
  4. Toss gently to combine and serve immediately.

Spinach, Mushroom & Poached Egg Breakfast

Ingredients

  • Woolworths Baby Leaf Spinach
  • Woolworths Mushroom Sliced
  • Spring Onion Bunch
  • Eggs (not on special)
  • Butter or olive oil (not on special)
  • Salt and pepper (not on special)

Steps

  1. Sauté sliced mushrooms in butter or olive oil until golden; add chopped spring onion and cook 1 minute.
  2. Add baby spinach and cook until wilted; season with salt and pepper.
  3. Poach eggs in simmering water to desired doneness.
  4. Serve mushrooms and spinach topped with poached eggs.

Roasted Butternut Pumpkin, Beetroot & Baby Potatoes

Ingredients

  • Woolworths Butternut Pumpkin Cut
  • Woolworths Whole Fresh Beetroot
  • Woolworths Washed Potatoes Bag
  • Olive oil (not on special)
  • Fresh rosemary or dried rosemary (not on special)
  • Salt and pepper (not on special)

Steps

  1. Preheat oven to 200°C (400°F).
  2. Chop beetroot and potatoes into similar-sized pieces; toss with butternut pumpkin chunks, olive oil, rosemary, salt and pepper.
  3. Spread on a baking tray in a single layer and roast for 35–45 minutes until vegetables are tender and caramelised, turning once.
  4. Serve hot as a side or main with a green salad.

Broccolini, Mushroom & Snow Pea Stir-Fry

Ingredients

  • Woolworths Broccolini Bunch
  • Woolworths Mushrooms Cups Punnet
  • Woolworths Snow Peas Fresh Bag
  • Spring Onion Bunch
  • Garlic (not on special)
  • Soy sauce (not on special)
  • Sesame oil (not on special)

Steps

  1. Trim broccolini and halve mushrooms; slice spring onions.
  2. Heat sesame oil in a wok or large pan, add minced garlic and cook 30 seconds.
  3. Add broccolini and mushrooms and stir-fry 3–4 minutes, then add snow peas and spring onion and cook another 2 minutes.
  4. Splash with soy sauce, toss to coat and serve immediately with rice or noodles (not on special).

Rustic Potato & Onion Soup

Ingredients

  • Macro Organic Dutch Cream Potatoes Bag
  • Woolworths Onion Brown Bag
  • Woolworths Baby Leaf Spinach
  • Vegetable or chicken stock (not on special)
  • Milk or cream (not on special)
  • Butter or olive oil (not on special)
  • Salt and pepper (not on special)

Steps

  1. Dice potatoes and chop onions; sauté onions in butter or olive oil until translucent.
  2. Add diced potatoes and enough stock to cover; simmer until potatoes are tender, about 15–20 minutes.
  3. Blend until smooth or leave chunky, then stir in milk or cream and wilted baby spinach; season to taste.
  4. Heat through and serve with crusty bread (not on special).

Grilled Corn & Tinyberry Tomato Salsa with Avocado

Ingredients

  • Woolworths Corn Sweet
  • Tinyberry Tomatoes
  • Avofresh Classic Avocado Guacamole
  • Spring Onion Bunch
  • Lime (not on special)
  • Fresh coriander/cilantro (not on special)
  • Salt (not on special)

Steps

  1. Grill corn on a hot grill or pan until charred; slice kernels off the cob when cool enough to handle.
  2. Halve tinyberry tomatoes and finely chop spring onion and coriander; combine with corn kernels and a squeeze of lime.
  3. Season salsa with salt and stir through a few spoonfuls of avocado guacamole for creaminess.
  4. Serve with grilled fish, tacos or tortilla chips (not on special).

Mushroom & Spinach Stuffed Truss Tomatoes

Ingredients

  • Woolworths Tomato Truss Punnet
  • Woolworths Mushroom Sliced
  • Woolworths Baby Leaf Spinach
  • Breadcrumbs (not on special)
  • Grated cheese (not on special)
  • Olive oil (not on special)
  • Salt and pepper (not on special)

Steps

  1. Slice tops off tomatoes and scoop out seeds to create cups; reserve lids.
  2. Sauté mushrooms in olive oil until soft, add spinach until wilted; mix with breadcrumbs and grated cheese, season with salt and pepper.
  3. Fill tomato cups with the mushroom-spinach mixture, replace lids and place in a baking dish.
  4. Bake at 180°C (350°F) for 15–20 minutes until cheese is melted and tomatoes are tender; serve hot.

Green Bean, Carrot & Snow Pea Sesame Salad

Ingredients

  • Mulgowie Green Beans Cleaned & Cut
  • Just Veg. Carrot Sticks
  • Woolworths Snow Peas Fresh Bag
  • Spring Onion Bunch
  • Soy sauce (not on special)
  • Rice vinegar (not on special)
  • Sesame oil (not on special)

Steps

  1. Blanch green beans and snow peas in boiling water 1–2 minutes, then refresh in ice water to keep them crisp.
  2. Julienne or slice carrot sticks if needed and thinly slice spring onion.
  3. Whisk soy sauce, rice vinegar and sesame oil to make a dressing.
  4. Toss beans, snow peas, carrots and spring onion with the dressing and serve chilled or at room temperature.

Baby Cos Lettuce Cups with Smashed Avocado & Corn

Ingredients

  • Woolworths Lettuce Baby Cos
  • Avofresh Smashed Avocado
  • Woolworths Corn Sweet
  • Spring Onion Bunch
  • Lime (not on special)
  • Salt and pepper (not on special)

Steps

  1. Separate baby cos leaves and wash gently; pat dry.
  2. Cook corn, cool and cut kernels off the cob; mix with chopped spring onion.
  3. Spread a spoonful of smashed avocado on each lettuce leaf, top with corn mixture, a squeeze of lime and season with salt and pepper.
  4. Serve as light bites or starter.

Roasted Mini Potatoes & Broccoli with Garlic Butter

Ingredients

  • Woolworths Potato Mini Microwavable White Bag
  • Woolworths Washed & Ready To Cook Broccoli Florets
  • Garlic (not on special)
  • Butter (not on special)
  • Fresh parsley (not on special)
  • Salt and pepper (not on special)

Steps

  1. Preheat oven to 200°C (400°F). Toss mini potatoes and broccoli florets with olive oil, salt and pepper and spread on a tray.
  2. Roast for 20–25 minutes until potatoes are golden and broccoli edges are crisp.
  3. Melt butter with minced garlic and chopped parsley; toss roasted vegetables in garlic butter to coat.
  4. Serve warm as a side dish.
