Tomato & Cucumber Salad

Ingredients

  • Truss Tomatoes
  • Lebanese Cucumbers
  • Spring Onion Bunch
  • Woolworths Baby Leaf Spinach
  • Olive oil (not on special)
  • Balsamic vinegar (not on special)
  • Salt (not on special)
  • Black pepper (not on special)

Steps

  1. Wash and slice Truss Tomatoes and Lebanese Cucumbers into bite-sized pieces.
  2. Finely slice Spring Onion Bunch and add to a large bowl with Baby Leaf Spinach.
  3. Toss tomatoes, cucumbers, spinach and spring onion with olive oil and balsamic vinegar.
  4. Season with salt and black pepper to taste and serve chilled or at room temperature.

Broccolini Stir-Fry

Ingredients

  • Woolworths Broccolini Bunch
  • Woolworths COOK Stir Fry Mix Rainbow Vegetables
  • Spring Onion Bunch
  • Garlic cloves (not on special)
  • Soy sauce (not on special)
  • Olive oil (not on special)

Steps

  1. Trim broccolini and slice any large stalks; chop spring onions and mince garlic.
  2. Heat olive oil in a wok or large frying pan over high heat and add garlic until fragrant.
  3. Add broccolini and the COOK Stir Fry Mix; toss and cook until vegetables are bright and tender-crisp.
  4. Stir in soy sauce and sliced spring onion, cook another minute, then remove and serve immediately.

Mushroom & Spinach Omelette

Ingredients

  • Mushrooms Cups Loose
  • Woolworths Baby Leaf Spinach
  • Woolworths Onion Brown Bag
  • Eggs (not on special)
  • Butter (not on special)
  • Salt (not on special)
  • Black pepper (not on special)

Steps

  1. Slice mushrooms and finely chop onion from the Brown Bag.
  2. Sauté onion and mushrooms in butter until softened, then add Baby Leaf Spinach and wilt.
  3. Whisk eggs with salt and pepper, pour over the vegetable mixture and cook gently until set.
  4. Fold the omelette and slide onto a plate; serve hot.

Roasted Potatoes with Garlic

Ingredients

  • Woolworths Roasting Potatoes
  • Garlic cloves (not on special)
  • Olive oil (not on special)
  • Fresh rosemary (not on special)
  • Salt (not on special)
  • Black pepper (not on special)

Steps

  1. Preheat oven to 200°C (390°F). Wash and cut Roasting Potatoes into wedges or chunks.
  2. Toss potatoes with olive oil, crushed garlic, chopped rosemary, salt and black pepper.
  3. Spread in a single layer on a baking tray and roast for 30-40 minutes until golden and crisp, turning halfway.
  4. Serve hot as a side.

Beetroot & Rocket Salad with Feta

Ingredients

  • Woolworths Whole Fresh Beetroot
  • Woolworths Baby Leaf Spinach & Rocket & Rocket
  • Tinyberry Tomatoes
  • Feta cheese (not on special)
  • Olive oil (not on special)
  • Balsamic vinegar (not on special)
  • Salt (not on special)

Steps

  1. Roast or boil Whole Fresh Beetroot until tender, cool and slice thinly.
  2. Halve Tinyberry Tomatoes and combine with Baby Leaf Spinach & Rocket in a bowl.
  3. Top with sliced beetroot and crumbled feta.
  4. Drizzle with olive oil and balsamic vinegar, season with a pinch of salt, and toss gently.

Stuffed Mushrooms with Tomatoes

Ingredients

  • Mushrooms Cups Loose
  • Truss Tomatoes
  • Spring Onion Bunch
  • Breadcrumbs (not on special)
  • Parmesan cheese (not on special)
  • Olive oil (not on special)
  • Garlic (not on special)

Steps

  1. Remove stems from Mushrooms Cups and chop stems finely; dice Truss Tomatoes and slice spring onions.
  2. Sauté chopped mushroom stems, spring onion and garlic in olive oil until soft, stir in breadcrumbs and diced tomato.
  3. Fill mushroom caps with the mixture, top with grated Parmesan and drizzle with a little olive oil.
  4. Bake at 180°C (355°F) for 12-15 minutes until mushrooms are tender and tops are golden.

Baby Cos Lettuce Wraps

Ingredients

  • Woolworths Lettuce Baby Cos
  • Woolworths Qukes Baby Cucumbers Punnet
  • Perfection Fresh Kumato Tomato Punnet
  • Cooked chicken breast, shredded (not on special)
  • Mayonnaise (not on special)
  • Lemon juice (not on special)
  • Salt (not on special)

Steps

  1. Separate leaves from Woolworths Lettuce Baby Cos and rinse; slice Qukes Baby Cucumbers and Kumato tomatoes.
  2. Mix shredded cooked chicken with mayonnaise, lemon juice and a pinch of salt to taste.
  3. Spoon the chicken mixture into lettuce leaves and top with cucumber and tomato slices.
  4. Serve immediately as handheld wraps.

Creamy Potato & Celery Soup

Ingredients

  • Woolworths Mashing Potatoes Bag
  • Celery Fresh Whole
  • Woolworths Onion Brown Bag
  • Vegetable stock (not on special)
  • Cream (not on special)
  • Butter (not on special)
  • Salt (not on special)
  • Black pepper (not on special)

Steps

  1. Dice potatoes, slice celery and chop onion.
  2. Melt butter in a large pot and sauté onion and celery until softened.
  3. Add potatoes and enough vegetable stock to cover; simmer until potatoes are tender.
  4. Blend the soup until smooth, stir in cream, season with salt and pepper and serve warm.

Beanette & Broccolini Pasta Salad

Ingredients

  • Woolworths Beanette Pre Pack Punnet
  • Woolworths Broccolini Bunch
  • Tinyberry Tomatoes
  • Pasta (not on special)
  • Olive oil (not on special)
  • Lemon (not on special)
  • Salt (not on special)

Steps

  1. Cook pasta according to packet instructions; drain and cool slightly.
  2. Blanch broccolini briefly in boiling water until tender-crisp, then chop into bite-sized pieces.
  3. Halve Tinyberry Tomatoes and combine with cooked pasta, broccolini and Beanette peas.
  4. Dress with olive oil, a squeeze of lemon and salt to taste; toss and chill before serving.

Grilled Mushrooms & Red Onion on Baby Spinach

Ingredients

  • Woolworths Mushrooms Cups Sliced Punnet
  • Woolworths Red Onions Bag
  • Woolworths Baby Leaf Spinach
  • Olive oil (not on special)
  • Balsamic glaze (not on special)
  • Salt (not on special)
  • Black pepper (not on special)

Steps

  1. Slice red onion and toss with sliced mushrooms and olive oil, salt and pepper.
  2. Grill or sauté the mixture until onions are caramelised and mushrooms are browned.
  3. Arrange Woolworths Baby Leaf Spinach on a platter, top with the warm mushroom and onion mixture.
  4. Drizzle with balsamic glaze and serve as a warm salad or side dish.
